CHILLI CHICKEN

 

Let's talk about the famous Street food in Kolkata. 

As you know Bengali's are famous for two things; food and talk. Oh, man! We love taking, taking and taking. (Sorry my Bengali friends). About food! If you talk about 15 min. 5-8 min. will include food topics. What is new? Where do you get? Why it is famous? So on and on...
Whether it is hygienic ..don't care; as long as it tastes good and spicy.
Viruses? Forget it. We have enough immunity to handle it.
I am sharing Kolkata style chilli chicken recipe. This is a popular Indo-Chinese dish found in china town (Tangra) in Kolkata.

There are two ways to make chilli chicken.
One is an easy way which is less oil and less messy but trusts me the flavour is amazing.
The second one is the usual or tradition method. Fry boneless chicken pieces dip in the batter mixture of egg white, cornstarch and all-purpose flour. Then toss and coat with all sauces; like soya sauce, vinegar, chilli sauce, ketchup or sweet tomato sauce. 
This is easy and less messy one. 

Chilli Chicken 

Ingredients-

For imagination:
  • 250 gm boneless chicken (cut in cubes)
  • 2 egg white
  • 3 tbsp of dark soya sauce
  • 1 tbsp of vinegar
  • 2 tbsp of ketchup
  • 3 tbsp of hot chilli sauce
  • 2 tsp Chinese cooking wine
  • 2 tbsp of garlic paste
  • 1 tbsp of ginger paste
  • 2 tsp of salt (or according to your taste)
  • 1 tsp of pepper
  • 1 tsp of white pepper
  • 2 tbsp of cornflour
    For sauce:
  • 1 big onion ( cut in big cubes)
  • 2 cloves of garlic (finely chopped)
  • 1 big capsicum (cut in big cubes) 
  • 2 green chilli (cut lengthwise)
  • 1 bunch of chopped spring onion
  • 3 tbsp of oil
  • 1/4 c of chicken stock (or water)
  • 2 pcs of dried red chilli
  • 2 tsp of sugar
  • 1 pinch of MSG

Method-

  1. Nicely marinate the chicken. Keep in the refrigerator for a minimum of 10 -12 hr. This will enhance the taste.
  2. Heat oil in a heavy bottom pan. Add 2 dried red chilli.
  3. Statue chopped garlic and onion for about 20 sec.
  4. Add green chilli then transfer all marinated chicken into the pan. Mix that well and close the lid. From time to time stir the chicken.
  5. Add chicken stock if needed and add sugar too.
  6. Check chicken if it is on the way of almost done then add capsicum.
  7. When chicken is fully done sprinkle MSG and spring onion. Close the lid and turn off the heat.
  8. Serve with Chinese Fried Rice or egg chow mein.
